That’s the best part of making your own meatballs, you know exactly what’s going into your meatball because you’re the one buying the meat. There is no mystery. That’s a good thing.

Another key component of a great meatball is the percentage of fat in the meat. You need some fat in your ground meat in order to have an authentic Italian meatball experience. If you examine the best tasting and subsequently the highest priced beef steaks in any meat store, they will always have the best marbling which translates into fat (flavor) dispersed throughout the tissue. People pay a high price for this attribute so why not try and achieve this in your meatball.
You can do this with playing with different meats. For traditional Italian meatballs, you typically see a combination of ground beef, pork, or veal mixed together.
If you are going to use pre-packaged ground beef as your only meat ingredient, then look for min 15% fat content or “regular” ground beef, not “extra lean” ground beef. We understand dietary restrictions may prevent some people from eating fat and we suggest that you use dark poultry meat like Turkey or Chicken thigh meat which you can find pre-ground at your grocer. 1. 1/3 ground beef, 1/3 ground pork, 1/3 ground veal
2. 2/3 ground beef, 1/3 ground pork
3. 1/2 ground beef, 1/2 ground pork
4. 100% ground beef (min 15% fat)
5. 100% ground Turkey or dark chicken meat.
