2finely chopped garlic cloves or 1 tsp of granulated dry garlic
Salt and Pepper to taste
Pinch of flaked red chilies (optional)
3 tablespoons of tomato paste
1 teaspoon of sugar
1 tsp of dry Italian herbs, basil or oregano
1 28 oz can of crushed tomatoes including liquid
1. Heat olive oil in a medium sized pot over medium heat. Add onion, herbs, tomato paste and stir constantly until onions are softened making sure to not allow the thick mixture to burn or stick to the bottom of the pot. (reduce heat if necessary, keep stirring to caramelize) 3-5 min.
2. Add crushed tomatoes, sugar, garlic and bring to boil, then reduce the heat to lowest setting and simmer sauce covered for 20 minutes or until needed. If sauce is too thick, add a small amount of water to desired consistency.
